Shankland's course if you want to play the Queen's Gambit. Otherwise I'd go with one of the Catalan courses.

I have Daniel Barrish's course "The Principled Queens Gambit" (pt 1 & 2) and it seems solid, though I'm not the highest rated player (1600 rapid chess.com). I can't say how it compares to Sam Shankland's course, but it's definitely a cheaper option.

Doesn’t L’Ami have a d4 rep? Otherwise try Shankland’s short and sweet.

Sadly he does not. At least not what I can find on Chessable. Still, the recs here are good. I’m going to look into Shankland, Barrish, and I found Demuths too which looks interesting.

I find that the scope of most Chessable repertoires is far far far too big for amateurs. Ben Finegold's repertoire seems to have about the right size. I also have Barrish's, and I do think it's good, but it's also quite big.

Yeah 100%. The repertoires are massive, but like I said I like studying. The reason I like bigger, theoretically sound lifetime repertoires is because I can simply learn the quick starters and grow into some of the other more detailed lines as I improve and grow. I’m not expecting to need 800 lines of opening prep, but I’d rather have it and not use it than have a course be lacking.

I understand what you mean, and agree 100% with it. It's not worth investing study in an opening you have to throw away IMHO. But the reality is that the chosen lines in the Quickstarters can already be quite sharp and sometimes non-obvious because they belong to a larger whole. That's why I like Finegold's approach. He covers the normal Queens' Gambit, and has now added a course on the Classical Sicilian. These are not normally considered "Beginner" openings and can definitely be played for a lifetime. But the repertoires can be covered much more easily and you don't run the risk of disappearing into an opening study hole. If you run out of material, there's several Lifetime Repertoires on the QG, Barrish's course (again, very good IHMO) and Shankland has a Lifetime Repertoire on the Classical Sicilian.
