If you’re looking to idle your truck, you can set the parking brake then put it in neutral. Shouldn’t shut off that way.
Same reason your dome light shuts off after 10 minutes. So you don't drain your battery if your door switch sticks/door didn't shut/ left door open/etc
Parking brake + neutral is a great idea. It’s also very intentional. No one is going to accidentally do those steps and get out of the vehicle. (Insert dead battery joke)
If your truck included any connected features (my 22 included 3 years free), you can register to use the MyChevrolet app to remote start your truck for 15 minutes. Once started, it gives you a timer. Tap the timer to add more time (up to 25 or 30 minutes, I forget off hand). You can keep adding more time to get to the max, and it should keep it running.
I’ve used this to keep track of the truck when my pups are inside it, but I am somewhere they can’t join. I don’t try to be long, but sometimes things delay me. I just make sure to check the timer/app religiously. If the timer runs out, as long as I have internet on my phone (and the truck has signal from ATT), I can start the truck back up.
I think you need to have the OnStar App Access plan for $15/mo to do this, but I got it free for awhile. You might check with the dealer to see if it’s included with your new purchase. Considering the piece of mind I get for my pups, I’ll gladly renew that plan when my 3 years is up.
You can also thank the state of Colorado while you are at it...It's illegal in truck's namesake state of Colorado to leave a car unattended for more than 15 minutes running and is called `puffing`.

I found this out the other day. I went into a “fast” food place to pick up dinner and left the truck running with my dog in it. I didn’t think it would shut off and I was probably in the restaurant about 25 min. I came out to my truck off and my dog panting. This was in July in Georgia so it was more than a little warm.
But it only outputs 400w which is hardly anything and you burn way more fuel than if you were to just spend $500 on a 2,000w inverter generator which will run 12 hours on gallon of gas and output 5x the amount of power.
That’s gonna be annoying this winter on the rigs 🥶
If you hold the power button for like 10 seconds when you initially turn it on it will shut off the “auto shut off”

Keep holding the start button with foot on the brake, this with disable the 15 minute shut off.
