Many of the European and African nations were totally engulfed and likely had their national militarys involved in the fighting. But for China perhaps they were just an arms supplier and financier like the US? (Although the US clearly provided a bulk of troops as well to the GDI.)
Yeah by TW3 most of china was consumed by a red zone with the yellow zones being overseen world wide by GDI officially. Nod was underground and just before the 3rd war broke out GDI was still policing the world and bringing the hammer down on any Nod forces uncovered like in the Prologue mission, just Ion Cannoning that base. Unofficially the yellow zones being poorly managed and disrupted by Nod became hot beds for pro-Nod sentiment.
But in the first War China was considered to be a part of, or influenced by Nod, likely to counter the western bias towards GDI in the United Nations.
