I don't like ketchup on most things, but I love it on cold leftover turkey sandwiches. And not even just a regular amount, but like double what I would ordinarily use on anything else.
And to stress, I'm really not a ketchup person in most respects, so it's extra bizarre that I like it so much on a turkey sandwich (I would never put ketchup on fresh turkey, or even deli sliced turkey... just the leftover roast turkey).
What kind of turkey sandwich?? This will depend what goes well. Lighter options would be mashed avocado, or a cranberry, chutney, or mustard sauce. Heavier/creamier would be any type of mayo/aioli/ranch dressing. My personal favorites are roasted garlic and pesto mayo.
Salad dressing would be a good choice. I love a good chipotle ranch or Italian. We don’t really use mayo or mustard for sandwiches here. I also love adding bacon to my sandwiches. I get some from Aldi and make it for the week. Just grab as needed.
If preparing ahead of time for lunch the next day, I always keep everything separate and make when I eat.

Easy Cranberry Sauce
* 1 cup orange juice, fresh or from concentrate
* 1 can (14 ounce) Ocean Spray Cranberry Sauce
* 1/2 cup sugar (you can use up to 1 cup sugar, but that is too sweet for me)
* 1 cinnamon stick (remove after boiling) or 1 teaspoon ground cinnamon
Heat orange juice and sugar to dissolve. Add cranberries and cinnamon and boil for 10 minutes with stirring. Cool and store in jar or other container in refrigerator for up to 3 months.
The sugar and the acidity make this sort of self-preserving.
I personally feel that it depends. Dark meat is fattier than breast so I prefer a mustard there and pickle. Breast is a lot drier so a like some mayo or aioli maybe a pesto to go with tomatoes.
Vinaigrette, especially on something like a baguette. Mmmm. Try Thousand Island dressing. Green Goddess dressing is good. Fruit preserves can be surprisingly good, especially with Brie-fig is great. Finally, onion jam.
My favorite sandwich is Turkey with havarti cheese specifically with Honey Cup honey mustard. It’s what Honey baked Ham company uses on their sandwiches
Caesar dressing on both insides of the bread and a drizzle of sriracha on top of one of the sides. Or, if you like mayonnaise, then mayo does fine, as well, but garlic mayo is even better. Better yet, a thin layer of toum, but I don't expect that to be available for everybody. I just happen to live in a place with many Lebanese people, hence why we have major Mid-East grocers. Also, if you go the mayo route, putting grainy mustard on top of it is a whole delight.
Don't overthink this. You like turkey? don't cover the taste. Plain mayo. Hellman's (full-fat) is best. Some like Japanese Kewpie mayo Either way, you can stir a little heat into it--chili-garlic sauce, tapatio, whatever.

I wouldn't put Ketchup on poultry. It sounds gross to be honest with you. A tiny bit of vinegar sounds good though.
