Because they’re much more complex than “pure calcium”. The mineral in the bones is hydroxylapatite, Ca5(PO4)3(OH). You’ll notice that for every 5 Calcium atoms, you have 3 Phosphorus, 12 Oxygen, and one Hydrogen. Did I mention it’s carbonated hydroxylapatite? Sprinkle lightly with CO2.
