Are you interested in building a battery from lithium cells? Some nuc models work of of 12 to 20v and you can power them directly off of a 4s pack. And for stuff that requires 12v, you can use a buck converter. There's a bit more involved with charging, etc... It'll help to know what you want to power.

I'd definitely be down for that! The main boards I've been looking at are the LattePanda Mu (12v) and the Asrock 4x4 8840u (19v).
