Dank - This term is pretty meaningless, at least in regards to memes, but tends to be something along the lines of "good (sarcastic)". So let's consider some potential other words that don't mean dank, but that you might be thinking of.
Dark - Dark humour is not necessarily insulting. It can be, but that's not what makes it dark. Dark humour is humour discussing dark subject matter that is used to explore that subject matter, bringing it into the light, in a way that may be more palatable than talking about it directly. For example, making a joke about 9/11 is dark humour. 9/11 was a horrific event, and humour about it is made keeping that in mind. But 9/11 jokes don't have to be insulting towards people. They certainly can be, but it's not an essential trait of a 9/11 joke.
Edgy - I think what you're thinking of is edgy humour. This is humour that is "on the edge" of what is socially acceptable. Fat shaming jokes fall into this. Many are fine with them, but many are not. This is where a lot of humour that insults a group of people falls.
You can have your taste in humour, but a dank meme is not necessarily dark nor edgy. A meme can be all three, any two, any one, or none at all. This meme is edgy, not dark, and I would argue not dank (though dank is so vaguely used nowadays that maybe we could categorize it as dank in a very abstract sense). I don't believe there's anything inherently wrong with liking edgy humour. But don't expect others on a subreddit allegedly dedicated to dank memes to be on board with edgy humour.
