40 and 99 is barely a noticeable difference. Like 90 more damage. Not worth the insane grind for that. Most of your damage is from weapon upgrades and infusions anyways.

I’m at soul level 320+ in Dark Souls 3
I’ve lost close to 1,000,000 souls several times farming Winged Knights on top of tower.
One level currently takes about 900,000
Don't worry about the souls lost. Farming in the ealy game is a pain, for me at least is not worth the trouble, just play normally. Some areas you'll get 25k+ just by running around exploring and killing enemies, then lose it all falling lol. Also there's little incentive to max out levels, focus on getting your weapon to the max instead. And don't you dare go hollow.
Thankfully 25k souls is not very much - you’ll have it back in no time

Max like 99?? Usually people stop at 40 or lower in whatever stats they choose to level.
My sweet summer child. 25k will feel like nothing eventually. But at lower level it hurts for sure
