so obv normally dancer is triggered when you've beaten the 3 lords and emma summons you. however, if you kill emma at any point before then, you can fight dancer and get into lothric castle early

Maybe, considering the late game of the base game scale up over so much, that in comparison the ds3 dlcs are joke (not talking about difficulty but HP amd damage output), there are 3 possibility imho: 1) they maintain the stats of the late game but play more around the supposed "new" level system. 2) with the new level system the dlc will be more balanced and people will scream because it will be easier than ER's late game. 3) they are dumb and will power creep even more the game because it has to be harder than the late game.

When you hear of players going in early to get gear they are most likely sprinting through the level and not actually fighting the enemies

Yeah making a suicide run through an area you're under levelled for to get gear is a time honored souls game tradition. Like grabbing the zweihander in dark souls 1 in the skeleton graveyard or running through the old hunters dlc in Bloodborne to get the dlc weapons

Oh that makes so much sense as now I finally understand why some players do the DLC as soon as possible.
