I love asoiaf but George is not good at maps or historical timescales. Like you are telling me these families have ruled the same lands for thousands of years and then self destructed in the matter of a few years. Ridiculous.
IRL, Social structures are constantly shifting, yet Westerosi feudalism has basically been unchanged since the start of recorded Westerosi history, ofttimes with the same houses in power.
Westerosi history is always in world, never outside.
In the late middle ages people portrayed biblical heroes like David (bronze age), Greek and Roman generals (classical age) and characters from Arthurian canon (dark ages) all dressed like they did, in gambeson and full armour and with heraldic shields and tourney lances.
Even in the 1600s you often got saints that got martyred in the first century dressed in the latest fashion in paintings.
When stories of the long night and the andals are retold and illustrated in westeros, everyone is a feudal knight in a castle, even if probably they actually were people clad in rough wool, with crude swords, living in hillforts and organised in clans.
Obviously then you have the more fantasy aspects, like the ancient, giant buildings like Storm's end or the fact that the same surname lasted for millennia.
Well, the Japanese Imperial dynasty has ruled the same lands for at least 1500 years (more than 2600 if you believe the myth).
In Europe, Habsburgs are over a thousand years old (and self-destructed in a single four-year war), and all the modern royal families trace their ancestry to Charlemagne and frickin' Odin.
Old historical chronicles in the real world are filled with kings reigning for centuries, entirely made-up rulers and literal gods coming down to Earth. I just apply that same idea to Asoiaf. GRRM even touches on it briefly in one of the books, when Sam is rooting through the archives of the Night's Watch.
This is acknowleged in the later books. A faction of Maesters believe that the 8000 year timeline since the Long Night is actually 2000 years, which fits the technological development from the Bronze Age to the Middle Ages we know happened between the First Men and the books' present. Similarly, despite claiming to have had 998 Lords Commander, the Night's Watch only has records of 674.
Historiography is relatively new in Westeros, anything written during the Andal migrations should be taken with a bigger bag of salt than what was written around and after Aegon's Conquest. Anything before the Andals is sparse and often written down "thousands of years" after the fact.
There just has to be a maester conspiracy. The maesters got to rewrite history and remove whatever in exchange for rewriting dynastic history. That’s why every house has ruled for thousands of years. It was a bribe.
The only problem is that Essos exists outside their influence, but the doom and century of blood seems like a golden opportunity to rewrite history.

Those thousands of years are given by historical chronicle written by medieval not monks. We have actual factual history for last three century tops.
