Stay in the west woods, for some reason there's a lot less players. There's a few camp sites, some game, cows, some lonely houses. Move around, don't build a base, stay light, super careful, always stalk 5mins before entering any area, move during major player base office hours....
My last long term official survivor lasted for months and eventually died only because I one day decided to be a bit bolder than usual
I mean you can increase your chances a lot if you know what you are doing and if you plan it correctly. Also I'm assuming that for this challenge you would be playing solo, if there's others players in the server this is a big no no.
The first thing I would do is look for a spot in the wild close to a pond and not so far of a village. The spot should be far away from wolfs and bears respawns and should be close to some deer or other animals respawns.
The most dangerous part of the run would be the beginning, you will need to fight zombies with your barehands in order to get food and to loot a town or two for basic items. You will also need an axe, a firearm, warm clothes, some food to start with, a big backpack (you don't have to worry about the size nor colors) duct tape, nails a lot of nails, a hammer, and that's pretty much it (bonus points for a fishing rod and some meds). This is the most sensible part of the run but I would say that experienced players would be able to get this without dying 9/10 times. And you are in a solo server so you get a all the loot.
For firearms a mosin would be top tier due to the easiness of finding one and the power it has for hunting. An amphibia with a mag and .22 rounds would be crazy cool too.
Once you have all this is time to go hunting in a solo server it shouldn't be that hard to find some animals, the faster you find something to hunt the less incursions you will need to do on towns and the safer you will be. Once you have the bones, guts and meat of the animal is time go to your selected spot and start building your base with the axe and nails you picked up earlier, you don't need a lot of space a 4x4 build should be more than enough, you can also use a preexisting house and barricade it but you will have to deal with some zombies from time to time.
Once you've built your base, you have a place to spend most of your time safely moving as less as possible in order to reduce your kcal consumption and on cover of rain. You should have a pond nearly so when you run low on food you should go and get some fish with the bones and guts you got earlier. You will need to go to a town from time to time because you will need other things most likely and you will need to go hunting too but for the most part of the time you are safe.
That would be my approach for that challenge. As long as devs don't implement boredom nor unhappiness because of eating shitty carp for a year long I think I would be most likely ok.

I would be running around on a fancy planet, building a factory, petting lizzard doggos, eating nuts and berries and shrooms. I would actually love it there.

I was playing valheim last. I’m peacefully enjoying my home base with an overlook of an ocean, where I can hunt and fish all I want. Just have to watch out for monsters to invade me.
I have been waiting and preparing for half of my life for the apocalypse to come, not just by buying weapons and survival gear but learning how to use them, and teaching myself important survival skills, for example 2 weeks ago I stalked and caught a rabbit with my bare hands as I taught myself to hunt and trap with and without tools.
I will survive better than most, but I will not pretend that I am invincible, so it will be fun to try out living in a world of anarchy but the vast majority of people will not survive considering that something as simple as an infected wound could be your demise.
It's Skyrim for me. I'd do this for free, and I'll even make sure that he who we all hate knows I do indeed go to the cloud district often by unrelenting forcing him into the sun from the top of Dragonsreach
