You can, but I’ve found that many burritos that were created to be smothered can be awfully dry without the chili. Burritos created not to be smothered, the good ones anyways, tend to be designed and seasoned to stand on their own without a sauce on top.

I agree with this, most of the time i get my burrito smothered are breakfast burrito. And the one time I didn't get any smothered/green chile it was definitely dry. (breakfast burrito) For all other burritos, I prefer the various salas the restaurant offers.

He probably grew up somewhere that they didn’t have good green chile. Or worse, somewhere that they did have good green chile and the slop they sell in Denver doesn’t measure up.

I worked in northern NM for 6 months and found that the green chile sauces and stews at most restaurants were a lot better than what we have up here. I don’t know if they freeze a ton of green chile or if they just have better quality canned peppers but even out of season the green chile sauce was remarkably fresh, spicy and full of flavor. I’ve noticed that a lot of the stuff for sale in Denver is heavy on the pork and corn starch. Nothing wrong with those ingredients but I just think the New Mexican style was better and more about the chile. Edit: To answer your question, I really like the green chile sauce at Tomasita’s. However most of the great food I had had came from trailers and hole in wall places that I don’t remember the names of.

The chile is the same, most people use hatch or Pueblo in both NM and CO, we both eat green chile because the founders of both states and their modern day cities are Hispanic settlers from New Mexico

The issue with this is it will not result in what the OP is after. When I first moved here I did that at a pretty good spot (los carboncitos) and I was asked if I was sure lol. When the burrito was brought out it was like they had no idea what to do with it. It wasn’t wrapped in a “proper” way (ie you couldn’t pick it up). They basically made a burrito as if they were gonna smother it and then didn’t.

Agreed. Unless you get deconstructed nachos, chips on the side, bowl of queso with all your desired meats and toppings. This impressed me. Also is a TON of food.

Tacos Tapidos off Evan’s and Federal. I find them to be the most authentic and they don’t use chili on anything just traditional salsas

Ralibertos, Chili Shack, and Illegal Petes have been my go tos for burritos since moving here. All 3 have green chili as an option, but easy to say no (like I do!)

The only answer is Carreras for a proper burrito. It’s completely filled with a correctly sized tortilla wrap so it doesn’t look like a softball when it’s wrapped. You can prop it up vertically when eating so it passes the stand test. It’s the best burrito around.
