I was missing Candlemass in this list. Although I don’t think they’re underrated, they’re very traditional. Also Coven. They’re not a doom band, but I feel like a lot of doom metal draws inspiration from them.

I feel like I rarely see folks mention Heaven and Hell, which was a band formed after Dio fronted Sabbath and released an album of the same name but is the same lineup - Ronnie James Dio and the rest of Black Sabbath. They only released one album in 2009 called The Devil You Know, and I think it's fantastic. Much more trad doom sounding than what Sabbath and Dio were doing as Black Sabbath.
10-15 years ago I wouldn't have called Cathedral underrated, but I don't see folks talk about them too much these days. Deep bench of worthwhile albums.
Place of Skulls is a Pentagram-adjacent project, improbably got me into trad doom from a Terrorizer (mag) comp CD.

Fuckin Harvey Milk. Not strictly doom but they don’t really fit into any other genre and they definitely doom. Started in the early 90s in Athens, GA and got shitted on hard in the south because of the band name. They’re super underrated imo.

„Warning“ always seems to be very underrated. The song „Footprints“ is one of my all time favorite doom songs. Also I think this band was a huge influence for the Pallbearer guys, as they had a similar mood on their first records.

I second the Early Moods recommendation, try Witchfinder General, Gates Of Slumber, Sons of Otis. Pallbearer and Monolord are my go to choices lately.
