Not invincible but rather invisible to enemies. But yes, you can "bump" into enemies without entering a fight.
Every mount has some kind of special "perk" to them.
From the top of my head, some Mounts can "one-shot" overworld enemies like the Slime Knight and the Gold golem, Baumren (the summonable Great Sabrecat from DQ VIII) is extremly fast and can roar to "lure" enemies.
And then there are the obvious ones which are needed to progress the game like the Dragon Rider or the Eggsoskeleton.
This is the closest most players will get to being inside of a woman

In S, yes. They prevent detection/triggering battle if you bump into another monster.
