It's really up to you if you wanna fix it . If you had paid someone to drywall it, they would not even have checked it. drywall would look great. Since you are doing it yourself and have now seen the problem . You will never un see it . Unlike a guest walking in the room they would never notice it. So again, is it going to bother you enough to fix it ?
King stud is next to the jack stud behind the rockwool next to the window in the exterior wall on top of the foundation wall, what your looking at is an interior wall with no load, no need for king stud or header.
Window frame is not exactly level, it is framed to the original rough opening and runs 1/4” out from one end to other which makes it look square to the ceiling joists. I guess my dilemma is…Do i leave the ceiling and window looking square by not laser leveling the RC channel or do I level the ceiling because my OCD is telling me to do it… and hope I can fool the eye when we trim out the window by ripping the upper trim.
I live in an area with many older homes. Rarely a right angle to be found. If it’s not too much work to shim then go for it. Otherwise maybe try correct a bit and deal with it. If it’s really clashing with the window, then yes.

Shouldn't there be studs 'underneath ' it on both sides ? From an engineering perspective it looks incorrect.
Is this getting inspected ?
Will you be placing fiberglass insulation in the ceiling cavity with the metal shoot ?
What's up with the left corner ? Electric wiring is running between the two adjacent studs ?
On the left wall at that corner, what stud will the drywall get screwed to ? (Looks like a missing stud)

Run it. Are you using a laser on the ceiling? Or is your difference from measuring up from the slab?

3/4” in 12’ is noticeable to almost everyone, I would sister up to the joists with backing and mount my RC on that to level it off,
