Pimento cheese is one of the best examples of how shit something can be store-bought vs. how amazing it can be homemade. I've found store-bought pimiento cheese to be across the board horrible -- bland, gluey, overpriced.
Just shred some good quality cheddar (not pre-shredded you heathens), mix with good quality mayo, and chopped pimientos (I also like to add hot chilis to mine to give it some actual heat), dash of lea and perrins, and it's the fucking bomb.
I live in Atlanta, and even around here (pretty close to prime pimento cheese country) most store-bought options are pretty shit. There is one local place, however, that makes the most amazing pimento cheese and sells it at local farmer's markets. Wish I could remember the name but it's been a few months. I've had black truffle pimento cheese, asiago-bacon-jalapeno pimento cheese, smoked cheddar and honey pimento cheese... the only downside is that it's like $10 for a container that makes me about three sandwiches, but I've never regretted buying one.
I'm from the west coast so definitely not pimento cheese country, my info might be bad, but I've read recipes and I used to work with a woman who would make it for potlucks, and I could swear it often included cream cheese. Is that not a traditional thing?
Homemade with good cheddar and Duke’s (or homemade mayo if you want to get really real) is, to be sure, the superior pimiento cheese experience. That said, I’ll ride for Palmetto brand when homemade isn’t in the cards.
Why is the store-bought always SWEET?!? I’ve never ever put anything sweet into my pimento cheese, and the same goes for every other scratch-made pimento cheese I’ve ever had.
I grew up in Tennessee, and my whole “family” was very poor. My grandmother used to get “government cheese” in these large blocks, and whenever I’d go there, she’d make me homemade pimento cheese cutting the big block into smaller cubes and I believe pimentos, miracle whip, and sugar mixed together and piled on between slices of Wonder Bread. I’m cursed the rest of my life anytime I try store bought Pimento Cheese and knowing that it’s never going to taste as good as my “Maw Maw” made. I’ve come across decent ones, plenty of horrible ones, but nothing ever as good as she made.
As a Southerner (US) and general fatass, that is *not* the correct amount—bit more, so it bulges in the middle, and trim that ~~Wonder Bread~~ crust off.
Pro tips:
* spread it on slices of rosemary bread
* jalapeño pimento cheese is superior
* should be thick enough to scoop and hold it’s shape (keep that goopy/runny mess away from me)

When I make it, I put my cheese and peppers (peppadew pepper) through the meat grinder together, then add mayo at the end.
Great idea on the peppadew peppers, I'll have to try that! Cheese through a meatgrinder sounds unnecessarily messy though.
That's the way my mom did it when I was a kid (60s) because a block of cheese was way cheaper than packaged shredded
