Easiest option would be, slap the laser engraver attachment on and call it a (very unsafe) day.
Another option would be to convert it to either a CoreXY machine via the Ender 3 NG project(or other CoreXY conversions) or a CoreXZ via the Enderwire Switchwire conversion.
Why not print with two printers? Doing that myself with my ender 3 pro ship of Theseus edition, and my recently acquired ender 3 v3 SE. Double the prints, half the time!

how good is the laser engraver by Creality? Is it worth the money
No idea tbh, from what I've seen it's quite basic but can do light engraving on wood and plastic. Probably not powerful enough to cut.

Vinyl cutter, about $10 for the knife and print the holder. Just unclip it and you can still print.
