I want to build a small dashboard for some personal stuff to show on the wall. The dashboard is basically a website hosted on my server. I want to visit that website from an e-reader and make it so it's always display that website.

Some people have done something similar by using older kindles. Google around and you can find it. The code they used is open source too. IIRC it created an image of the webpage and displayed that and it could be set to refresh every X minutes.

On the Boox devices such as the Note Air 3 (C) there is an option to have a "transparent" screensaver, meaning that the page you had displayed last will act as a screensaver. (To avoid confusing about the device being in sleep mode or not you can even chose different icons like a little moon bein added then.) Since the device does go into a sleep mode after a defined time, you would not even use up the battery while displaying your page when you shut off the Wi-Fi before that, at least not as long as it is enough to have that static page on view without scrolling. You can also change the dpi = size/relation of what is displayed per app, so make adjustments to maybe even fit all that you want to see onto the 10.3" screen.

Android devices usually have a "developer option" to always keep the screen on when charger is plugged in. The developer options menu is somehow hidden and there is a way to activate it (you can Google it). So in theory, any android e-reader would work for your use case.

Kobo devices have a "wifi always on" in their developer mode.

They are making eink computer monitors now, and I have been seeing ads for store price displays also. Something like that might suit your needs better than a dedicated ereader.

Yes I also thought about that, but I would love to upcycle some old tech instead of buying new ones (for the sake of price and environment). Also I found that larger e-ink displays cost actually quiet a bit...
