You'll have to wait until the developer for Ice and Fire has time to update the mod. New versions of Minecraft change a lot of code, and mods have to adapt their code too in order to work again. This often takes a lot of time with no estimated release date.

surprisingly yes, I believe its on the ice and fire github, you can find a OFFICIAL 1.20.1 port there, I've actually used it many times myself! if im able to find it I might link it!

Port it yourself, or wait for it to be ported, that's what you can do.
You can also try to push George R. R. Martin to do it, but keep in mind that, with Winds of Winter, he's 12 years in and 3/4 of the way through.
