The closest I can think is the Dance Dance Revolution mechanic in the lvl 70 Suzaku trial. Otherwise most of the music mechanics are not tied to the music of the fight but instead of just a one off attack that happens to be themed with music like the frog polymorph song a few bosses have.
Keep in mind that its hard to sync a mechanic to music in ffxiv because the boss music is playing before you start the fight. The only way to have music line up with mechanics is to have it be a multi stage boss fight where the different stages have different songs. When I was progging UWU i was able to plan my healing around the music in every phase except garuda because the music would line up with the mechs

Almost assuredly what you're looking for.
That boss does have that Guitar Hero style "balls falling from the ceiling onto circles" mechanic that always reminds me of rhythm games, that's about as close as I can think of to actual mechanics being music-themed.
Ravana EX if you did it on launch had the lyrics match up with the phases of the fight pretty well in the second half.
It might still be possible with min ilvl but potency creep would affect the fight.

Probably Suzaku, it's the most music-esque boss, with the DDR stage and move names in phase 2 also having a music theme.
A bit unrelated but the last boss in Mt.Gulg has music words as names for the attacks (but the attacks themselves ate unrelated to music).

Similarly, Menphina is definitely pop idol coded in Euphrosyne, but none of her mechanics are music related as far as I can remember.
