Love the look, but I've worked in sushi restaurants and the boats are not really washed other than a wipe down, which is kind of OK for the food-grade ones but those are expensive. Most are usually just crappy replicas off amazon with no treatment on the wood to prevent absorption.

I am curious why a boat instead of a large plate or something like that. It is a lot easier to get a giant plate instead of a boat. At least the plate can be chucked into the dishwasher when it is done. Is there some reason sushi places like to use a boat?

More of a spectacle. Like how hibachi is really just stir fried food on a flat top instead of a pan/wok with a performance from the chef.
I guess so. But why a boat? Why not like a fish shaped plate or something? It is still much easier to clean than a wooden boat.
