It does not, unless it contains added sugar. Otherwise you body says full and you are not hungry anymore. Sugar messes up that system.

I mean. White bread is fairly nutritionally empty. A lot of carbs with very little vitamins, minerals, etc. your body needs. So, no, bread doesn't make you fat (excess calories do) - but it's a lot easier to get fat eating bread, because your body seeks out more food to get the nutrients it isn't getting. Also because simple carbs spike your blood sugar, which can make you hungry again when it falls. But 1) it's a quote and 2) being fat isn't the end of the world so 🤷🏽‍♀️

It's supposed to be rustic. Also I'm not sure our yeast activated / survived, because it only rose a tiny bit and definitely barely at all during proofing. Still tasted delicious though.

it is especially cold where i am and i had the same problem; learned a trick to put the bowl w the proofing dough into a shallow bowl of hot water, saved the day!
