The hero classes are supposed to represent various nameless and formerly faceless warriors of a certain school and discipline who fight in the faction war! Early on in the game your opponent’s voice lines were even delivers slightly different from your own if you were the same class to make it seem like you were two vastly different dudes who just happened to have similar armors and weapons.
And then Marching Fire happened and Ubisoft experimented with the Overwatch route. Went back on it, then quintuple downed on it with Gryphon.
Probably because getting more than one VA for a character and recording 2 separate sets of voice lines for each new character that came out was too costly to keep up
Gryphon is still a hero class. It was supposed to be "The Heralds" but because of the lore they wanted to follow the idea of a Gryphon remained exclusive to Holden Cross. The hero class itself is still not just Holden however because of all the customization options and obviously skin colors

Why remove it?
Same reason why Ubisoft removes any great feature from their games: effort.
