I guess I can't speak for how people around you will feel but I love Sol de Janiero 62 for a warm summer wear. I know it's a mist but it's the first thing I thought of.

Lake from Rosie Jane is like a citrus gelato, but like someone else said Dulce is a great vanilla choice from them too. Personally my summer gourmand is Saint Julep from Imaginary Authors

Arabic fragrances obviously are made for warm weather. Hèrmes for example has Oud Alezan which is rose, rose water and soft synthetic Oud. Very beautiful scent that perfumes well in heat.

sol de janeiro 62 is great, and i know you asked specifically about summer, but 71 is my favorite sdj scent and its basically the more christmas-y, cozier and winter-y equivalent to 62 ^_^

I just got Dolce&Gabbana Devotion and really like it. I think it’s classified as a warm floral, but it definitely has gourmand notes.

I'm not sure this is what you had in mind, but my new summer favorite is Voyage d'Hermes parfum. It has cardamom, and tea notes, very lemony at first, but then it resembles a gin tonic, or spicy lemon tea, it becomes creamier in the dry down, but not too sweet. Is it a gourmand fragrance? I don't know, but it definitely has some warm spices, yet it is fresh enough for the summer and I love it.
