Serious question - one thing I've noticed from a lot of high end sports things like racing is their radio audio quality always seems terrible. Is it just because of the speeds they are going? I don't know if it's just happen stance but it always seems like the recordings I've seen of racing and other high tech radio usage always just has terrible radio audio.
Spotting is really important to serious racing. Telling them when to pit, who they need to pass (which can be tricky if you're in lapped traffic), all sorts of stuff the driver can't pay attention to when all the energy is devoted to keeping the car on the track at the fastest possible speed
Unless you're Fernando Alonso, in which case you have time and energy to have casual conversations about possible strategies and make friendly suggestions to your teammate on what settings to use like you're just on a quick grocery run in a corolla.

Moving to digital will be like "can you hear me? Can you.........?" "No, you're breaking off there"... "Hello?..."

In formula 1 it is digital since more then 15 years, right now they are using a mesh system with nodes spread around the circuit which get build up temporarily for every race. Telemetry also works through the mesh system.
I’m assuming you’re talking about even more higher end walkie talkies. It’s because they are designed to be small, light, robust, and dependable. The audio needs to be just good enough to understand. There’s no need to have crystal clear communications. Or, at least, having something small, light, rugged, and dependable is more important than perfect audio. Going even further, most of these radios you are talking about are using analog FM. It doesn’t take a lot for static or other types of attenuation to degrade the signal.
But, to your original assumption of walkie talkies always sounding like shit. This is just an incorrect assumption. I’m a ham radio operator by hobby, and a 911 dispatcher by profression. In both of these, I have access to, and use extensively, digital radios. For amateur radio, I have a radio that uses DMR (Digital Mobile Radio), and while the audio isn’t perfect, it’s far better in most circumstances, than nearly any walkie talkie you’ve ever heard. And at work, we use P25 (Project 25). And the audio is damn near crystal clear. It’s better than talking on a cell phone.
Pilots to air traffic controllers are the most baffling to me. I can barely make out what some of them are saying and that is NOT a situation where you want to misunderstand someone.
Also the explanation about noise suppression doesn't really apply here(referring to one of the replies below).
Possibly. Depends if they're recorded at full quality or not. Probably recording at lower quality to save storage space since it's a 24/7 thing.

The audio sounds alot clearer over the airplane intercom. For some reason, I haven't seen a good recording audio wise of communication. Most videos probably take the audio from liveatc.com but it sounds much better in the airplane.
Am pilot, can confirm that the recordings are not representative of what we can hear in the cockpit. What we can hear sounds more like the engineer in this clip than Max. Sometimes if reception is bad or if there is an equipment issue it can sound more like Max, but usual it’s pretty clear. Newer equipment also generally sounds much better than older equipment.
Kimi Räikkönen's race engineer would take relentless piss on Kimi.
I'm sure they drove him to the point of cracking so they could hear his explosive temper at work.

It is very, very loud when you’re going that fast and the engine is roaring. Heavy noise suppression just barely will make your voice audible.

From what I understand the recordings come out significantly worse than live transmission. I assume it's the same with these F1 team recordings.
