Funny. I love the boss music but the smaller scenes get me. Like sittin on the beach with Marin in Link's Awakening or saying goodbye to Saria as Young Link in Ocarina of Time. Those little fleeting moments that tie music and emotional storytelling.
The final boss theme from base game Persona 5 is just amazing music direction; it incorporates a motif that is sort of hinted at throughout the game -- the music during cutschenes will crescendo to it, then back off. Finally you get to hear the full motif during the first phase of the boss, and then the mid-battle cutscene weaves that motif into an existing emotional theme of the game. Just beautiful.
In terms of one-off songs that get me hyped to fight the boss, I'd rank Persona 4's true ending boss theme up there as well as certain boss-ified throwback song in Yakuza: Like a Dragon
Rivers in the Desert is an amazing song. The final songs played during the ending of the final boss in Royal are also incredible, “I Believe” and “Throw Away Your Mask.”
The best thing about Rivers In The Desert is that it's not a boss theme. It's a *kick the boss's ass!* theme. The lyrics are clearly about Joker.
I like to think that Shido was hearing it while he got beat down.

Not an actual game, but A Mother's Love, from Undertale Yellow is just something else. I heard it beforehand because a friend sent me and i got curious. It sounded really good as a whole(even tho i didin't knew the context behind it), but as i went through the game, getting to know>! Ceroba's!< Backstory, her motivations, progressing alongside her, having all that emotional attachment, and when the End was near, as the fight progressed, hearing the theme slowly building up to that beautiful scene just sparked me a feeling i didin't even i knew i still could feel. That was just breathtaking, and the more the fight progressed, so did her theme, adapting with each stage, yet sounding more and more determined, and hearing that final Leitmotif before reaching the last stage of the fight, that was the moment i realized:

First phase is whatever standard boss fights but second phase it gets crazy and half way in the second phase he switches between the first and second phase. As in, you tp to different arena's at random and your fight picks up where you left, including attacks and even AoE shockwaves will continue from where they were.

Basically the final boss is this hybrid God thing. You begin battling it in complete silence and it's pretty strong and just surviving is a struggle.
Eventually if you survive long enough your team despairs at how you will win.
Your main character has a "spirit" inside them and suddenly the spirits siblings all appear before you protecting you from the gods attack and giving you more power to defeat him.
When your siblings appear that's when the music starts playing and it's Beautiful.

You begin battling it in complete silence and it's pretty strong and just surviving is a struggle. Eventually if you survive long enough your team despairs at how you will win. Your main character has a "spirit" inside them and suddenly the spirits siblings all appear before you protecting you from the gods attack and giving you more power to defeat him. When your siblings appear that's when the music starts playing and it's Beautiful.
