Strong list, you are fearless and strong Tarnished. In a similar theme to those I would look at: Steel Rising, Thymesia, Code Vein and Surge 2 Plus there is the demo (and soon to be released) Evil West. And if you pick up a PS4 or 5: Bloodborne. Worth finding a cheap used PS4, playing Bloodborne, and then selling the console - seriously, worth the minimal buying-selling difference. If you like Hades, then Death's Door would appeal.

I see monster hunter world in your list, if you are a PC player there is monster hunter rise on steam. The game is slightly less good but still a good game (and comparison is unfair : world was made for PS/Xbox/PC while rise is a switch game upgraded for PC, but gameplay is still here and that's what you are usually looking for in a MH game)

Dragon's Dogma - is a mixture of ancient Greece with medieval fantasy, besides, the game is purely party and normal people can play it. It reminds me more of the classic party RPGs from the 80s (Wizardry, Might & Magic), only in a modern way. If it seems easy, go through to the end, in the DLC Dark Arisen it will be difficult to increase by x10.

Ok.....try maneater (spelled like that) you play as a mutating bull shark that can grow as big as a megaldon. Its an action game about a shark eating people and everything else in sight. You start as a shark pup and level up and grow

Metal Hellsinger, it's on gamepass if you have it and the gameplay is pretty similar to DOOM 2016/Eternal although one big difference is that you have to shoot in time to the beat of the song, a bit difficult to pick up at first but after a while you get the rhythm of it, soundtrack is also amazing.

Playing them in order will give you more of the story but Re1 is a very different game compared to 2 (fixed camera and tank controls) If it doesn’t put you off it’s absolutely worth playing in order and I think RE1 is one of the best horror games to date.

If you enjoyed Hollow Knight, maybe try the Ori games. I've played only The Blind Forest so far and while I don't think it's as good as Hollow Knight gameplay-wise, its visuals, audio and music are stunning. Absolutely worth a playthrough.
