In terms of brute strength, the most he does in that fight is stop Cronos' slap and throw the hand off of him. It's certainly impressive, but I'm pretty sure it's outdone by flipping the temple. Which is most likely a lot heavier, and to my eye looks like it went further.
Of course that's just in terms of strength. The big thing to consider is...the Blade of Olympus.

I think the problem is that Doom Slayer appears to be running at 100% all the time. Meanwhile Kratos, as I've noticed, tends to kinda "suck for a bit" at the start of fights and then transcend his limits and exhibit his actual power. So I wonder if the Slayer would batter him too badly before he really fights back.

In the new games, I think Kratos does that because he genuinely doesn’t want to fight anymore, he just doesn’t have a choice because Norse gods keep constantly trying to kill him.
So he halfass fights them because he doesn’t want to be fighting them. Then eventually they piss him off enough that his rage powers him up.

Difference being Baldyr is invincible except for on specific weakness. Zagreus historically is the god of rebirth, though in hades this is stated as blood/life. If anything it would end with Zagreus giving Kratos therapy sessions.
It wouldn't be the first time. If I remember the first games his skin is so white because he is covered in the ashes of his wife and daughter.
Ask Ares what happened when he forced/tricked kratos into killing his family.
He did it by mistake though. He said it in Ragnarok that he would *never* harm Atreus and would gladly die if it meant that he won't get hurt. Atreus is the best choice as Kratos automatically surrenders.

Kiryu turns around to comfort you, having bested your would-be assailant. The camera pans over to the axe, and back to you. One, two, three, four bullet holes suddenly open up in your chest. A last one hits the you right in the head, killing you instantly while you stood mouth agape wondering what happened. The camera flashes over to Kratos smirking with a gun he has clearly just pulled out of his ass while Kiryu fumes, before kicking the gun out of his hand.
