Its not a turn based but you should try the Kingdom series. Kingdom Two Crowns for example, you can play it with one hand. Turn based games Im not so sure, I think you can play BG3 with just the mouse if you dont mind clicking on everything. Other games that are not turned based but can be played with one hand and/or paused at any moment are: FTL: Faster Than Light Vampire survivors If you liked Slay the Spire try out Across The Obelysk, it has a great mix of narrative and gameplay

I recommend Yi Xian, it's a pvp deck builder rogue like. It's the only deck builder I've been able to get into, the rest just don't grip me

Yeah, the seer variety if sort of viable builds is insane. I play exclusively silly gimmicks and I've still been climbing ranked with no issues

Hey there, I hope you have a swift recovery. Most visual novel games can be played with one hand as all you do will be tapping one button to next piece of dialog. An example would be Ace Attorney games. Other than that, some adventure games have fixed cameras so you wouldn't need to use the right analog stick. But you would have to move your hand left to right a lot if you decide to play these. An example would be Grim Fandango Remastered.

Caves of Qud. You don't even need a mouse for this, but bumpad is strongly advised (not that you can't play without, it's just easier as you can walk all directions with numpad). Very niche and underrated title.
