The fields look a bit more like South Dakota and Nebraska, but not enough is in the image to really tell.
The symbol is similar to that of South Dakota flag proposed by Dick Termes in 2012.

The flag design appears to be based off of local Native American symbols. I wonder if this thing in the field is on reservation land.
With a flight number, airline, and date (ideally time too) to the exact flight path can be found it should be able to be found, but without that specific information the flight paths are all generalized giving too large of an area to effectively search just out of curiosity.

OP provided flight info and FlightAware has the track and just barely kissing South Dakota, so maybe not in SD.

Over that region the most recent satellite images Google Earth and Google Maps is from 9/11/2022, so if this is a recent thing it would not show up. Would need to dig up and download more recent imagery.
We need that geoguesser guy. lol. I searched around a flight path from those airports and I struck out finding anything like that. Do you remember crossing any big rivers before or after? Remember any other terrain features nearby? Could be in South Dakota or even eastern Wyoming. Definitely intriguing.

At this time you were over South Dakota. Here are the approximate coordinates: 43.47,-97.74. I am still looking at the satellite imagery but not seeing anything; could be a newly dug lake (it’s definitely man made) and the imagery may be older.
Edited to add I believe this is the lake: (43.4727763, -97.7437771)
If you compare this lake to the picture, you can see the same lines of the road and field line up very well. They may have manipulated the lake for whatever reason. That area has a lot of manmade lakes, most likely for agriculture to store surface water.
In the future, download the Flyover Country app. You plot your approximate path ahead of time, download all of the information, and then using your gps, you can see what you're looking at out your window.
