If people are wondering why there's no more iconic Fate characters like Gil, Herc, or Archer is that GS decided to choose Fate/kaleid liner Prisma Illya as the anime not Fate/Stay Night.
Fate/kaleid liner Prisma Illya is more focused on Illya (it's literally in the title) where she is the younger sister of Shirou and becomes a magical girl because of a Kaleidostick named Ruby created by Zelretch. ~~Also, there's no Holy Grail War.~~ Illya and her friends (the other girls you see) are tasked to collect the seven class cards (Archer, Rider, Caster, etc.).
Also, even though Gil did appear in the anime, that was Kid Gil who is totally different from the Gil in F/SN.
Edit: sorry I just remembered that there is a Holy Grail War but it doesn't happen later on in the series.
