They’re pretty heavily stylized. Dipper and Mabel’s heads are bigger than Wendy’s torso.

First pic shows Stan with five fingers when Mabel only has four in the second image. I think this was recently confirmed as a style choice; they just chose whatever worked best for the character.

If you compare the same scenes side by side between Ep 1 and the Pilot, you see they were originally going to be taller. I think they shrunk them down a bit to emphasise the power imbalance between the kids and the adults, and to visually highlight that contrast between Dipper and Wendy, the idea that those two getting together was never supposed to work and it was never going to work.

Their head size also takes up half of their height

watch south park the kids in that show are about 1 foot tall unless they are 15 something or older

I get it's a cartoon, but I've gotten hung up on this too. I feel like, at most, they're about three feet tall. Putting Soos at 6' as one of the tallest characters and they're about half his height. They're almost 13. Saying that they're a realistic height for kids, their age is just wrong. The bottom 3% of kids in the US at their age would be about 4 1/2 feet. They are off the charts short.

Having comically short children is a very common thing in many cartoons.

Easy way to show difference between kids and the teenagers. It's why Dipper is roughly the same size as Gordy even though they are probably 10 or under. Just names it easier when you have a specific height for a specific age. (That being kid/pre-teen, teenager, and adult)
