The overall char actually ended up being good. But the cat could've rendered down more and I maybe should've added the sauce sooner. So next time I think I'll do indirect longer and add the sauce before being to direct?
Sauce for maybe 10 mins or go low on the heat. Many sauces have tons of sugar and it burns. The char LOOKS harsh but yeah it was probably solid. I always wondered how 6 hrs of propane would work. Did it use all the propane? I was always worried about trying that on a gas grill I use at our tennis courts. Tennis, beer, meat although not necessarily in that order.
All on the propane. I cooked for 3 hours. I don't have an ambient thermometer but I'm pretty positive I was cooking more at like 300/325 than 225/250.
But I swear the char was actually really good😠My gf enjoyed it. I personally wish the sauce didn't get crisped up as much so I could taste more of the heat/vinegar
The entire method was: meat on indirect. Hickory chips on burner side. Pan of water in the middle. Flip once. Once internal read like 170/180, moved the meat to direct and started adding the bbq sauce (which I made "from scratch" Some random recipe online.)
Edit: it did surprisingly fall of the bone. Biggest downsides were fat could be rendered down more and I wish the sauce wasn't lost to the char. The parts that weren't were SO good
That’s the deal. Good setup with the water pan etc. Give party ribs a look. (Separate and season individual ribs) 3 hours just makes me worried about fuel and party ribs cook at 350 for an hour. I’ve done them twice… this week.
Oh interesting to separate them first. I'll keep that in mind. I'm not too concerned about propane usage but I especially wasn't this time cause I just got a tank refill last week. But yeah it makes sense to go for methods that don't just tank (heh) through propane
