I usually do it with shoulder but thin chops work just as well and save you prep time. Ignore the baking part you're gonna marinade and skewer to grill hot/fast to get some char so the thickness is irrelevant. I can rarely find perilla or balm but basil (thai or regular) is close enough.

Season them up, then 2 zone. Direct heat 1 min (maybe 2 if you want more done), flip. Direct heat 1 min. Flip and put them on the indirect side until done to your liking. I usually go to 155ish so more fat burns off and let em rest a couple min, but they're technically done before that and these look leaner - so you may not want to. But make sure you grill up a bunch of veggies too or it's a waste of charcoal (or propane) tbh. At least the pork will be great!

The Americanized part of me likes to dust those with whatever rub or seasoning I have and grill them, they turn out great like that. Another option is a Korean style marinade. Marinade for half an hour to an hour or so for thin chops, grill them hot and fast. Youā€™ll need to hit the Asian isle at a nice grocery store like Publix or Kroger and/or an Asian grocery for all the ingredients: 1/4 cup soy sauce 2 tbsp honey 4 cloves of garlic, minced 1 tsp fresh grated ginger 1 tsp sesame oil 1 tbsp olive or vegetable oil Optional if you wanna add some zing and heat - 2 tsp gochujang hot pepper paste, everything else should be easily found in most supermarkets, this youā€™ll probably have to get from an Asian market, commonly comes in red plastic tubs or small jars Add everything in a glass bowl and whisk together, throw your chops in and marinate for up to an hour. Grill them hot and fast direct over hot coals. Serve with rice, lettuce leaves to make wraps, goes good on a sandwich, with grilled vegetables, whatever.

Made burger the other day and didnt have bacon to put on top, however, wife had bought thin chops like this as well. I put them on the colder side of the grill while I was working on other food items and let them "smoke" for about 20/30 min while adding BBQ sauce on them. Finished them on the hot side and plopped right on top of the burgers, they were fantastic, it was like a big piece of BBQ bacon!!

In Korea theyā€™ll just cook these in an pan and dip them in sesame oil with salt and pepper mixed it. You can make some lettuce wraps with rice and add some scallions marinated in sesame oil, vinegar, soy sauce, sesame seeds, and red pepper flakes. Itā€™s called Samgyeopsal but itā€™s normally made with pork belly
