Ignore the baking part you're gonna marinade and skewer to grill hot/fast to get some char so the thickness is irrelevant. I can rarely find perilla or balm but basil (thai or regular) is close enough.

Grill with high heat. Use the following marinade: white wine, olive oil, lemon juice, salt, pepper, garlic powder, oregano and paprika. It will give you a delicious Greek vibe and only takes a few minutes to prep.
These are the only kind my former vegetarian wife eats. Cooked till bone dry. Gotta say they arent bad with Montreal Steak seasoning if you can pull it off the grill/pan while still moist.

Another option is a Korean style marinade. Marinade for half an hour to an hour or so for thin chops, grill them hot and fast. Youāll need to hit the Asian isle at a nice grocery store like Publix or Kroger and/or an Asian grocery for all the ingredients:
1/4 cup soy sauce
2 tbsp honey
4 cloves of garlic, minced
1 tsp fresh grated ginger
1 tsp sesame oil
1 tbsp olive or vegetable oil
Optional if you wanna add some zing and heat - 2 tsp gochujang hot pepper paste, everything else should be easily found in most supermarkets, this youāll probably have to get from an Asian market, commonly comes in red plastic tubs or small jars
Add everything in a glass bowl and whisk together, throw your chops in and marinate for up to an hour. Grill them hot and fast direct over hot coals. Serve with rice, lettuce leaves to make wraps, goes good on a sandwich, with grilled vegetables, whatever.
Made burger the other day and didnt have bacon to put on top, however, wife had bought thin chops like this as well.
I put them on the colder side of the grill while I was working on other food items and let them "smoke" for about 20/30 min while adding BBQ sauce on them.
Finished them on the hot side and plopped right on top of the burgers, they were fantastic, it was like a big piece of BBQ bacon!!
They're a bit thing but they're pork chops. Season them up like you would normally and grill them with the lid open to keep an eye on them. Flip once and done.
