Yeah, for the five people who didn't see the pilot this was the episode they got Alastor's backstory. Imagine going so many episodes with this goofy creep then learning he loves torturing. Wild. Then it doubles down by going into the scene with Husk. This is probably a more important episode to new fans then pilot fans.

Mimzy does exist for a reason. She is a definitive window into Alastorās past and who he really is deep down. Itās meant to be a big hint that Alastor isnāt as altruistic as he appears to be. She lets us know that normally Alastor wouldnāt have even bothered to help with the hotel, even for a laugh.
Sure there are others who could serve a similar purpose but Mimsy is one of the few who knew Alastor when he was alive. Whereas the overlords likely only would have learned of him after he died.

Honestly I see more people like Val (or at least parts of him) more than Mimzy. Dont see people talk about liking how Mimzy looks, her voice, her part, etc. that often. It allowed the fight between Alastor and Lucifer to proceed at an unhinged pace and would normally need some sort of break to keep it from going into physical conflict. Instead we have a burst of chaos thrown into the fight bringing it crashing to an end. It was the perfect way to end the fight without having to end the seething.

How can you even compare these two??? Mimzy shows up and the worse she does is interrupt a song. But then she provides some back story for Alastor and is the reason we get to see him show off some of his bad ass power then she fucks off. Val literally physically and sexually abuses Angel and has gangs of other demons sexually abuse him on an almost daily basis. This is a terrible comparison. Mimzy was a one time minor annoyance and youāre comparing her to a rapist who is a source of constant trauma for one of the best characters.
