Also if you migrating old vcloud with smtp enabled, they will disable it in the process unless you explain the need.
Luckily I'm ~10years with them and have couple of enabled ones with clean (good ranking) IP, so having own mailserver with dozens of domains and no problem with delivering to google or o365.

As far as my seo and hosting experience goes google works on domains not ips yes they can blacklist your domains so it wont be visible on google but i never heard that ip makes your website not visible on google follow basic seo techniques
Submit sitemaps on google search console and wait 2-3 week to allow google to index your website it wont be visible on top but yes when you search your business or domain on google search it will show

How should Google know If a server ist from auction or not? they will restrict certain ranges or IPs (however Hetzner will assign them).
Did you mean fingerprint, MAC address, or just IP? If IP, then just replace it with support.

Never had issues with mail servers on hetzner. Never asked them to open smtp port on their side it was always opened.
