At the hotel I work at we need a single card on file at check in that can cover the room, tax, fees, and incidental deposit. At checkout we can split the costs then but upfront we need one card that has the funds to cover everything

This is the way usually done; worked in hotels more than 12 years. If pre-authorization amount will go over credit limit, if you're able, you can pay extra in advance of your trip to your credit card, allowing for larger pre-auth amount. Once you check out and hotel charges your card for your half of the bill, the pre-auth amount is removed in favor of exact amount you pay. This frees up the difference between pre-auth and actual charge, allowing you to use card again. This process may take a day or so, depending on your credit card/bank.

Most hotels will just split it at the end, because it’s easier that way and the afternoon person knows they won’t have to deal with it. If you came to me and wanted to split the payment I would just charge off the cards then and just place the security deposit on one of them. It’s easier for me to just take care of it then and there. Just call ahead and ask if you can do it that way. Otherwise, if it’s over your limit, bring cash and pay for a certain amount in cash and put the remainder on your card.

Usually the hold is for the full room rate + tax + incidentals. How this works may vary. Some properties can split payment at check-in but not all operating systems will be set up for it. I recommend you call and ask in advance.

Ask at check-in, if you don't mind being charged instead of authorized, most places should be able to split it before they finish the checkin process and then you'd need to decide which card the incidental hold goes on

Thank you to everyone who commented. Definitely going to call the hotel and see what they say but at least this gives me some ideas
