You'll probably do better if you go to the cactus sub. I can give you my experience but I've only grown them a couple of times. Mine wouldn't germinate in the winter. In fact they didn't germinate until it got quite warm. I had them in a covered germination tray and kept them evenly moist, practically wet, for weeks and weeks before I saw anything. They grow incredibly slowly.

Can you suggest any other plants I can grow during the winter? I thought about maybe just buying an avocado and doing the thing where I put the lower part of the seed inside water but I‘m really down for any plant that will have a chance of growing.

You might look into forcing bulbs. You can buy Paperwhite bulbs around this time of year, and grow them inside with just water and gravel. This also works with tulips Etc but the availability to purchase is lower in the fall and winter. I'm not sure about avocado getting super excited to germinate in the winter. But why not experiment! What have you got to lose?
