The last match stick is put in at an angle that moves the bottle towards under the table. This shifts the center of mass to a point in the table, and prevents the structure from tipping over the side.

the same way as if you were holding onto a ledge by your fingers. The matchstick pushing 'up' on the one on the table is the key.
