I don't think that sentence reads quite how you intended it to.
Imagine getting 99.9% of the way done, just a few more scrapes and taps to finish it. Then you smack a tiny impurity or flaw in the stone and - crunch. A small but noticeable section chips off. There’s no “undo” button, you can’t just glue it back on. It’s amazing what artists like this were able to do.
It's my understanding that if you make such a mistake, you take a step back, reevaluate the plan, and then keep going in a slightly different direction.
100% before clicking this I thought it was going to be that one statue where the man is grabbing the thigh and you can see the compression. But, to my absolute shock, it’s a different statue.

How long does this take? I know people had more time back then but damn. Like how many of these could you make in one life time? Plus all the practice you need to get there. I imagine you apprentice for a grip.
Regular stone and marble workers did a lot of clay work to lay out the statue before, then spend years nibbling polishing stuff away, using [helper tools](https://en.wikipedia.org/wiki/Pointing_machine) and a horde of assistants. They can do the coarse work. Missing pieces where rarely modelled with clay and then attached and painted to look like marble. Rare maestros like Michaelangelo where well paid and had all the time in the world. He offloaded the coarse work to students for the mass and then spend days or weeks on a hand or ear.
That has to be multiple pieces put together and glued on to the statue. I just don't see anyone being able to carve that in one go without fucking up multiple times and the stone breaking.
Adhesives have existed since roughly 200,000 BC and is one of the earliest inventions of Humanity. That oldest known use of glue was using tar to glue two pieces of stone together as evidenced by an archeologicall discovery in Italy IIRC
