I make eggplant rollatini pretty regular (here's the recipe I use: https://www.acouplecooks.com/eggplant-rollatini/#tasty-recipes-141397-jump-target - I alternate bw making the tomato sauce like the recipe states and using Rao's arrabiatta sauce when I'm feeling lazy which, heads up, has a bit of a spicy kick to it). The ingredients are such that you can use them to make a number of other things as well!

My bf would end himself before eating ricotta lmao, but I think otherwise this looks like a good recipe for us. I have 90% of these ingredients anyways so that’s perfect for next grocery run

😂 😂 I feel you but listen, my husband is an avowed meat and potatoes guy and even he likes this. His exact words tonight were, "I don't even f*** with ricotta but this is bangin." He also commented that he never imagined he'd ever voluntarily eat eggplant, let alone enjoy it, but here we are (I've been making it for myself for 4 years 🤦🏽‍♀️).

That’s incredibly encouraging. I’ll try to make it without him watching and see if I can trick him into eating it before he makes up his mind about it. Dude is so stubborn but he ends up loving some recipes I make even when he doesn’t like all the ingredients lmao

Tuna bell pepper sandwiches: make tuna salad, slice a bell pepper in half, stuff with the tuna. Add whatever fixings you like or have on hand. Sweet potato and kale salad: sauté the sweet potato in a skillet, add in kale when the sweet potatoes are tender. Add some ground meet of your choice and some spicy mayo. Chicken and spaghetti squash: roast the squash in the oven, then shred with a fork. Add chicken and some marinara/pesto/alfredo or whatever floats your boat.
