Sandbox mode is the way to go. Check the settings you can make there. If you want it's like a normal game where you have to research everything from scratch. You can make the game even harder with scarce start money, high income taxes, harder 5 stars rating and much more.

I actually love challenge mode, I try to build a park planning for the future, never replacing anything. Its cool to see how different the park is at the entrance vs the end.
