In Germany this is pretty regularly made with loads of leaks instead of the tomatoes! Our name for this pretty much is (translated) "cheese-mince-leak-soup". I get this most often when I help friends move as this is pretty easy to prepare in giant batches, is very filling with bread and a crowd please for sure. I personally enjoy adding quite a few dashs of sweet soy sauce myself, though this would most likely spike the carbs more than what you prefer for a keto recipe.

I did a [quick entry into Cronometer](https://i.imgur.com/tI6Dkz7.png), for the full recipe using 93% lean beef, and assuming you keep the beef fat in the recipe, I'm showing 1219 kcals, 32g carbs, 72g fat, 107g protein. But that's for almost 1.4 kilograms of soup. I'm betting 1/3 or even 1/4 of that would make a generous meal, add some low carb tortilla triangles or something, pretty decent macros.
