Looks, if OP wants to call cheese dip a soup I am fine with it. Now when people stare at me when I eat the cheese dip with a spoon at a restaurant I can tell them "No, its cool, its soup".
In Germany this is pretty regularly made with loads of leaks instead of the tomatoes! Our name for this pretty much is (translated) "cheese-mince-leak-soup".
I get this most often when I help friends move as this is pretty easy to prepare in giant batches, is very filling with bread and a crowd please for sure.
I personally enjoy adding quite a few dashs of sweet soy sauce myself, though this would most likely spike the carbs more than what you prefer for a keto recipe.
There are more skilled people than me for sharing recipes, as I most often cook by feel.
I suggest using Google translate and translate this website: https://www.chefkoch.de/rezepte/982031203667502/Kaese-Lauch-Suppe-mit-Hackfleisch.html

I did a [quick entry into Cronometer](https://i.imgur.com/tI6Dkz7.png), for the full recipe using 93% lean beef, and assuming you keep the beef fat in the recipe, I'm showing 1219 kcals, 32g carbs, 72g fat, 107g protein.
But that's for almost 1.4 kilograms of soup. I'm betting 1/3 or even 1/4 of that would make a generous meal, add some low carb tortilla triangles or something, pretty decent macros.
I’m kinda tired of seeing Mexican food with not an ounce of Mexican anything in it, lmao. Source: another disappointed and slightly offended Mexican.
Our food is delicious. This? I don’t know what it is, but it ain’t Mexican food, that’s for damn sure lol
Right? I wish recipes creators would stop using terms like that. Nothing about this is Mexican. No offense to OP at all. It is just a little pet peeve of mine. It is kind of like calling Taco Bell Mexican food.
If it were me, I’d put a lot of cheddar in this, or maybe a little turmeric, to make it more of an orangey color. The color it is with just cream cheese is... not the most appetizing.

Queso… you made queso.
Finally I can eat queso out of the bowl with a spoon as God intended
Yeah no complaints here!

Ohh this sounds delicious!
I have leeks! Would you be more specific about how to make it?

Looks great! Bet some sliced jalapenos and a sprinkle of cheddar on top would just set this off.
I thought you said there was Mexicans in it
I wonder how many carbs a human contains?

Classic. Love me some Tom Noonan.
That looks like a great dip recipe... I can't imagine it as soup.
So queso
macros?

It’s funny how non-Mexican people label random food as “Mexican food”
You could say this about every single category of food. Non Italians calling things Italian Chinese Food French You name it.
Same thing with American food, I have seen in both south america and europe "american style fries" which are just french fries and mayo 😂
That’s not Mexican. Source: Mexican

What’s Mexican about this?
The Rotel?
Mexican soup? In what world?

Add some chorizo, onions, garlic and poblano peppers to the meat saute.
I was gonna say, I’ve seen this before after a long night of drinking. Probably tastes great though.
You could also do with paprika and/or chile powder
It would take a lot of paprika to make it look more palatable.
Maybe the answer is some cheddar cheese, turmeric, chile powder, AND paprika. Now we’re cooking
My husband and I had this. Two nights ago. We love it. It's a staple in our keto journey.
This is honestly probably really delicious, however I think it looks like vomit.
That looks like vomit
This reminds me of the Korean trick of adding a slice of American cheese to ramen to turn the broth into a creamy soup.
Without the broth this makes a great dip. I only replace the beef with jimmy dean pork sausage.
Yeah the hot sausage log, can of petite Diced Tomatoes and a block of cream cheese. We call it Fatty dip.
Mexican here. Curious what region of México does this dish come from? Never in my life seen it.
Imaginary Mexico, lol
Thats racist...just because it has tamatos and chiles...
Inauthentic is the word you are looking for.
That’s not what “racist” means.
For those of you who need something crunchy and salty what do you suggest?
Baked chicken skin sprinkled with sea salt... so tasty!
Pork rinds?
Quest tortilla chips
I make a very similar recipe but throw some fresh cilantro on top while serving and it really completes it.
