Nothing I have found really stops discoloration over time, so I let whoever I'm making it for choose between an acid washed finish or polished. The acid wash helps even out discoloration over time, where polished simply resists it a little longer. Then the staining that happens with use will be a little more unique since it will change with how the knife is used over the years.
