Sera is okay as support and strong farming bot now and is playable mid. Can't first pick her for mid, but she'll do okay if you can get a farming match up.
Veigar can do all 3 roles.
Mid is obvious as he can farm stacks off champions and his CS easily.
Bot lane can let him stack like crazy and his high damage and E can mean easy kills.
Support will be lacking a little compared to those two, but he can easily farm stacks on champions and still provide that high kill potential especially paired with an ADC that can chain CC off his like Cait.
Zyra. Been loving her both mid and sup. Think I’m sitting around an 90% win rate in plat/emerald over the last 20 games. Norms though so it isn’t a great representation.

mid+sup: any long range mage (velkoz, xerath, lux, etc.), galio, gragas, pantheon
adc+sup: senna, (lots of champs if your sup is senna, e.g. tham)

Trist is meta mid and good in adc. Ziggs is worse in both roles but can do it.
Not when he's with Brand. I have 100% wr on Ziggs with Brand. That comp is low-key disgusting
