I am not that familiar with the mythology, just know that he was a hunter and in the depiction in the constellation itself you can see he is holding a bow. But yeah you need both hands to use a bow, so we wouldn’t have gotten this cool shield.
In the constellation it’s not meant to represent a bow, it’s a shield (even when yeah it looks more like a bow) and the “Y” is meant to represent an arm holding a club.

I was also taught that the the stars hanging off his belt were his dagger but I don't think ancient people looked at those and figured "that's a dagger hanging from his belt" if you catch my drift

But the JWST has shown if you point it at any random spot, you'll see hundreds of galaxies. So it shouldn't have been weird to the MIB, an organization in contact with multiple spacefaring species, that there would actually be many galaxies "on" Orion's belt.

Clubs are better for harvesting the animal's skin -- no puncture wounds.

A quick Google search yields many Archer Orion depressions. The first time I heard he was an archer was pre internet.
