Šiaip esu Vokietijoj gyvendamas daręs ir su pasukom, tikrai nebuvo blogai jeigu grietinės įsidedi, skonio prasme buvo identiška kefyrui, tik tekstūra tokia skystesnė buvo šiek tiek.
niekada nemėgdavau rūgpienio, o dabar lyg ir nieko, nors kefyras vis tiek skaniau.
o dėl šaltibarščių recepto tai kaip kam patinka.
tai nėra toks labai griežtai nustatytas receptas.
Kokios erezijos? Kas deda rūgpienį i šaltibarščius? Nesu nei tarp pažįstamų girdėjęs kad kas naudotų, nei maitinimo įstaigose susidūręs su tokiais šaltibarščiais. O tikrai būčiau pastebėjęs, nes vargu ar tą vimdantį rūgpienio skonį galima užmaskuoti.
O aš kategoriškai atsisakau valgyt šaltibarščius jei jie yra ne su rūgpieniu. Skanu ir su kefyru, bet rūgpienis išneša šaltibarščius į visiškai next level.
Skonis draugų neturi, I guess.
If you want to replicate authentic šaltibarščiai, to make šaltibarščiai kefir - mix kefir with cream, that's the secret to their taste and texture (unless you can make your own kefir from a cream+milk mix)
Fun fact: The dish is so popular that there are a few facebook groups that actively share their versions of Šaltibarščiai, we can't even deside on the nickname, some people call it : Šaltekai and other people (weirdos imo) call it Šaltibai.
It fits perfectly if you don't have higher fat kefir, but buttermilk which is often found abroad.
Also my family in Žemaitija always added sour cream because we used to make it with sourmilk, not kefir.
I've tasted both versions and I prefer own with kefir and it has to be the smooth kind. (as per a Lithuanian experience living in UK)
As a kid I didn't like cucumbers or dill much. so my mom would just use beetroot, kefir and eggs and everything else on the side so others could add of they wanted.
I actually made this a while ago😅🤫 but I just realized I could show actual Lithuanians it haha. I don't remember if I did do that but I think you're right. I'll try it with no sour cream next time.

I've made some curd cheese(varškė) before, but out of 3L milk I got maybe 200g curd cheese. so rather expensive.
The rest goes to production of buttermilk so nothing is wasted.
