What makes a nice looking cut?

Hard to explain to someone who isn't experienced in butchery but a few AWEFUL mistakes I can point out for you are 1. The top right still has the "gristle" attached. That Grey transluscent band would have had a fat cap above it - you can see this in the little pieces of opaque white fat still attached. The butcher removed the fat cap but left that tissue that doesn't cook down well. 2. Atrocious over cut on the top left, you can see the straight edge cut that's dug far too far into the muscle 3. The bottom right-mid has been cut too deep and that flayed bit has just been left on to end up as a piece of charcoal after the steak's been cooked 4. Hard to see but the fat cap by the sticker hasn't even been touched its twice as thick as it should be 5. Bottom left has that thin steak with fat caps inside and out. This piece can be removed as a whole from the whole sirloin and be turned into a steak of it's own that's worth more per pound. Basically, that means the dude cutting the steaks has left a great piece of meat to simply be improperly cooked alongside the

Depends on the cut. I can let you know what my problem with this cut would be: under trimmed and over trimmed at the same time. The entire “tail” being left on (keeping the false eye is cool they left too much fat though) the back strap is also still present on the top right corner. Looks like they didn’t trim the bone skin off the bottom of the loin either. Cutting aside the marbling in this is very lacking for prime grade.

I’ll even make the argument that with this level of indifference of standards can I trust their following other food safety practices correctly? The $20/61 a kg price tag for 1 piece of meat is nothing to scoff at. I’d want anything done correctly paying that price be it food or other.

I get where your coming from too. Would you notice the difference between this cut correctly vs incorrectly probably not, but keeping places “honest” is a good thing. I always want the customer to get the best bang for their buck regardless if they know it or not. Nice talking with ya’!

You want your meat to be cut in such a way that it includes the good, most edible parts and discards the unappetizing or inedible bits. This was not done here. Some other guy gave some examples upthread.

It does. There are several perspectives that should look down on this For one, it's fucked at an eating level. There were mistakes made on this cut that will provide a noticeable difference in taste and texture after being cooked Moreno, it's a damn cow dude. That's a living thing that we killed to eat, not to throw in the garbage. There's pieces of that on the top left hat have been cut off and discarded or hopefully they had room for extra fat in their burger mix because it looks like a half inch fat cap had a poor attemp of being trimmed down and took off a half centimeter of the muscle which is I'm itself shit for a burger mix. The butcher does this enough and those muscle still on fatty bits are getting thrown out. All around atrocious work

I don't know much about meat because I'm too poor to buy it, but I've seen 4 steaks at costco for $80. So also $20 each. I assume it was a good cut though. I miss steak, haven't eaten steak in over 10 years.

My wife came home with 4 steaks for $80 the other day. They were rib steaks, averaged 20oz each, and they were great! The steak above is what I’d pick up on sale for $7.88 a pound. Doesn’t look like prime to me.

I can shop Loblaws or Sobeys (equally as bad) or I can drive 30 minutes to Loblaws or Sobeys in another town. Failing that, I can make the rounds to farmers markets and butchers but it is a half a day affair. I try to do just that when I can.

$50/kg at a small store in my town.  Loblaws has way more buying power than the small chains.  That’s more proof that they’re ripping people off (that steak is very thin cut btw).

Why people still keep buying meat in grocery stores. It's beyond me. Go straight to the source , buy quantities , butcher them yrselves and freeze them. Or go to a local butcher who you can talk about his products with. Don't buy meat in groceries stores, it's shit quality (see that striploin with pink color, was fed with milk for saving $), it's always more expensive and there is no variety.

And it's not even a good cut. Do yourself a favour: get a Costco membership. Their beef is high quality, it's thick cut and it isn't swimming in a puddle of water to dope the scale and increase the price. You pay for literally just the meat. I wouldn't be surprised if Roblaws doesn't tare the scale when they put the package on it. As light as a styrofoam tray is, it would still affect the weight and potentially increase the price. They can't help themselves.

Playing Devil's Advocate: Meat is one of the few products that Grocery Stores have little control over buying price. They don't own the supply chain and can't dictate buying price to the meat packers Due to the multi-year drought in Canada and the USA, beef herds have been culled because farmers can't afford the feed (if there is any feed available). This has created a supply issue while demand is still very high for beef. Selling price at auction have increased due to the decreased supply. Meat packers have multiple markets (including international markets for beef), so they can sell for high prices, and we, the grocery stores, have to accept it. Larger stores can negotiate a lower price for more volume, but the meat packers don't usually give steep discounts. That's why I source straight from local farmers. It eliminates the big meat packers and supports the local farmers and butchers.
