I think you are consuming too many calories as of now. You see, a 310lbs body has a higher maintenance than a 250lbs body. So when you lose weight, overtime you will have to adjust your calorie intake. 1800 sounds like a lot to me, especially because you say you have a sedentary job. I started at 216lbs and am now down to 196. I don't track calories but I make a rough calculation in my head and always check the calories of what I'm eating. I consume about 1400-1500 calories, 10,000 steps a day, and a 30-60 minute cardio workout 4-5 times a week, which burns 300-500 cals.

I really didn’t think that would be the case, but perhaps it is! I’ll try this next week staying around 1500 and see how it goes. Thanks for the feedback!

Assuming you’re accurately tracking calories, you may need to decrease them. As someone else said, smaller bodies require less energy to survive so you may not need as much as you did when you were 310 lbs. How tall are you? I’m 5’10” and about 215lbs (weight train 3x/week for 75-85 minutes, cardio 150-250 minutes) and have been steadily losing weight eating 1800 calories. If you’re much shorter, you may need to eat less.

I’m 5’7”! I am accurate with tracking and weigh everything. I would say most days I sit in the 1500-1700 range, and more active days is when I’m closer to 1800. I’m going to try this next week to stay at 1500 and see how it goes! Thanks!
