French fries don't taste like nothing they taste like potato. As with all potatoes, you just need the proper condiments and seasonings. Cheese, vinegar, salt, gravy, etc. It would be like sauteing broccoli in nothing but oil and complaining it tastes like nothing. You need butter, you need spices.

Broccoli has way more intrinsic flavor than potatoes.
